A rich chocolate cake layered with whipped cream and tart cherries, perfect for any celebration.

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries, drained and juice reserved
  • 3 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes. Then, stir in the boiling water until the mixture is well combined.
  4. Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  6. Once completely cooled, carefully slice each cake in half horizontally to create four layers.
  7. In a mixing bowl, whip the heavy cream with the powdered sugar and a teaspoon of vanilla extract until stiff peaks form.
  8. Start with one layer of cake on a serving plate. Drizzle it with a bit of reserved cherry juice, then spread a generous layer of whipped cream on top and sprinkle with a layer of cherries. Repeat this process with the next layers.
  9. Place the final cake layer on top. Frost the top and sides with the remaining whipped cream, ensuring an elegant finish.
  10. Refrigerate the assembled cake for at least 2 hours before serving to allow the flavors to meld beautifully.

Notes

Serve with espresso or sweet red wine. Store leftovers in an airtight container for up to 4 days.
