Deliciously fudgy brownies made with black beans, offering a nutritious twist on a classic dessert.

  • 1 can black beans, drained and rinsed
  • 2 large eggs
  • 1/2 cup cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. Combine the black beans, eggs, cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, baking powder, and salt in a blender or food processor and blend until smooth.
  3. Stir in chocolate chips if using, allowing for extra melty chocolate goodness.
  4. Pour the batter into the prepared baking pan and spread evenly to create a uniform surface.
  5. Bake for 20-25 minutes or until a toothpick inserted in the center comes out mostly clean.
  6. Allow to cool before slicing into squares and enjoy the rich, chocolatey delight!

Notes

Adjust the sweetness by adding more or less honey or maple syrup based on your preference. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
