A comforting recipe for flaky biscuits topped with rich and creamy sausage gravy, perfect for breakfast or brunch.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 pound breakfast sausage
  • 2 tablespoons all-purpose flour (for the gravy)
  • 2 cups milk (for the gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). In a large bowl, combine the flour, baking powder, and salt. Cut in the cold, cubed butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Stir in the milk until just combined.
  2. Turn the dough onto a lightly floured surface and knead it gently just a few times. Roll out the dough to about 1-inch thickness and cut it into rounds using a biscuit cutter or a glass. Place the cut-out biscuits on a baking sheet.
  3. Bake the biscuits in the preheated oven for 12-15 minutes, or until they’re golden brown and fluffy.
  4. While the biscuits are baking, heat a skillet over medium heat and add the breakfast sausage. Cook until it’s browned and no longer pink.
  5. Sprinkle the 2 tablespoons of flour over the cooked sausage, stirring until well combined. Gradually add in 2 cups of milk, stirring continuously until the mixture begins to thicken. Season generously with salt and pepper to taste.
  6. Once the biscuits are out of the oven and the gravy is smooth and creamy, it’s time to serve! Split the warm biscuits open and ladle the sausage gravy generously over the top.

Notes

For extra flaky biscuits, ensure your butter is very cold. Feel free to swap the sausage for a plant-based option for a vegetarian recipe.
