  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • ½ cup rainbow sprinkles
  • To taste powdered sugar (for dusting)
  • To taste cream cheese frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mix the flour, baking powder, and salt in a bowl until well combined.
  3. Cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour in the milk and vanilla extract and stir until well combined.
  6. Combine the dry mixture with the wet ingredients, stirring gently until just combined.
  7. Fold in the rainbow sprinkles carefully.
  8. Fill each muffin cup about two-thirds full with the batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack and dust with powdered sugar or top with cream cheese frosting if desired.
