A delightful blend of sweet, soft, and satisfying banana bread made from overripe bananas.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to your mashed bananas.
  4. Sprinkle in the baking soda and a pinch of salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Gently stir in the flour until just incorporated.
  7. Carefully pour your batter into a greased 4×8 inch loaf pan.
  8. Place in the oven and bake for 60-65 minutes.
  9. Once baked, let cool before transferring to a wire rack.

Notes

Use very ripe bananas for the best sweetness. Don’t over-mix the batter to ensure a tender loaf.
