Berry Chantilly Cake

A delightful summer dessert featuring soft vanilla layers, Chantilly cream, and mixed berries.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine flour, sugar, baking powder, and salt in a large bowl.
  3. Beat in the softened butter, milk, and vanilla extract until well combined.
  4. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  5. Whip the heavy cream and powdered sugar together until soft peaks form.
  6. Assemble one cake layer on a serving plate. Spread a layer of Chantilly cream and sprinkle with fresh berries.
  7. Place the second cake layer on top, frosting the top and sides with more Chantilly cream, decorated with berries.
  8. Chill the cake for at least an hour before slicing.

Notes

For extra flavor, try adding a splash of almond extract to the Chantilly cream.
