A comforting noodle dish that combines tender beef with fresh vegetables and flavorful sauces, perfect for busy weeknights or dinner parties.

  • 8 oz lo mein noodles
  • 8 oz beef flank steak, thinly sliced against the grain
  • 1 cup bell peppers, mixed colors, sliced
  • 1 cup carrots, julienned
  • 4 green onions, sliced
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons cooking oil (for stir-frying)

Instructions

  1. Prepare your ingredients: Slice the beef thinly against the grain, julienne the carrots, and slice the bell peppers and green onions.
  2. Cook the noodles: Bring a large pot of water to a boil, add the lo mein noodles, and cook according to package directions. Reserve 1/2 cup of pasta water before draining.
  3. Sauté the beef: Heat a wok or skillet over medium-high heat with cooking oil. Add the beef in a single layer and cook for 3-4 minutes until browned. Set aside.
  4. Stir-fry the vegetables: In the same pan, add the bell peppers, carrots, and half of the green onions. Stir-fry for 3-4 minutes or until tender-crisp.
  5. Combine noodles and beef: Return the noodles and beef to the wok, drizzle with soy sauce, oyster sauce, sesame oil, and reserved pasta water. Toss for 2 minutes until coated.
  6. Serve and garnish: Serve immediately, garnished with remaining green onions.

Notes

Consider serving with crispy spring rolls or a light cucumber salad, and a drink like chilled Asian lager or jasmine iced tea.
