Homemade Beef Enchiladas

Comforting beef enchiladas rolled in tortillas, topped with enchilada sauce and melted cheese.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ground beef, chopped onion, and minced garlic in a skillet over medium heat until the beef is browned.
  3. Stir in half of the enchilada sauce into the beef mixture.
  4. Spoon about 1/4 cup of the beef mixture onto each tortilla, and sprinkle cheese before rolling.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with extra cheese.
  6. Bake in the oven for 20-25 minutes until bubbly and cheese is melted.
  7. Sprinkle with chopped cilantro if desired and serve hot.

Notes

For an extra kick, add jalapeños or your favorite spices to the beef. Leftovers can be stored for up to 3 days in the fridge or frozen for up to 2 months.
