Comforting barbecue meatball bowls topped with a creamy avocado goddess sauce, perfect for cozy gatherings and family dinners.

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup chopped onion
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup barbecue sauce
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice
  • 1 clove minced garlic
  • 2 tbsp water
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup corn kernels
  • 1 cup black beans
  • 1/2 red onion, sliced
  • Diced avocado

Instructions

  1. Mix the meatball base in a large mixing bowl with ground beef, breadcrumbs, egg, onion, garlic powder, salt, and pepper.
  2. Shape the mixture into 16 meatballs, about 1½ inches in size.
  3. Brown the meatballs in olive oil over medium heat for 6–8 minutes.
  4. Simmer the meatballs with barbecue sauce on low heat for 5 minutes.
  5. Make the avocado goddess sauce by blending avocado, Greek yogurt, mayonnaise, cilantro, lime juice, garlic, water, salt, and pepper.
  6. Assemble bowls with cooked rice, corn, black beans, red onion, diced avocado, and meatballs.
  7. Drizzle the avocado goddess sauce over each bowl and garnish with cilantro.

Notes

Feel free to customize your bowls with different veggies or grains. Leftovers can be stored in an airtight container in the fridge for 3–4 days.
