A vibrant and satisfying bowl featuring crispy salmon bites, earthy brown rice, and fresh vegetables, all drizzled with a creamy, spicy bang bang sauce.

  • 1 lb salmon fillet, skinless and boneless, cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon honey
  • 2 cups cooked brown rice
  • 1 cup shredded cabbage
  • 1 cup sliced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds
  • Vegetable oil, for frying

Instructions

  1. Prepare the Dredging Stations: In a shallow dish, combine the flour, salt, and black pepper. In another dish, place the beaten eggs. And in a third dish, pour in the panko breadcrumbs.
  2. Coat the Salmon Bites: Dredge each salmon cube in the flour mixture, dip it into the beaten eggs, and coat it with the panko breadcrumbs.
  3. Heat the Oil: In a large skillet, heat vegetable oil over medium heat until shimmering.
  4. Fry the Salmon Bites: Carefully add the salmon cubes to the hot oil and fry for 3-4 minutes on each side until golden brown.
  5. Whisk the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, Sriracha sauce, and honey until well combined.
  6. Assemble the Bowls: Divide the cooked brown rice among four serving bowls and top with shredded cabbage, sliced cucumber, shredded carrots, and fried salmon bites.
  7. Drizzle and Garnish: Drizzle the bang bang sauce over each bowl, and finish with chopped green onions and sesame seeds.

Notes

Consider double-coating the salmon in breadcrumbs for extra crunch. You can also swap out vegetables based on availability.
