  • 1 lb ground turkey
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 carrot, shredded
  • 1 cup purple cabbage, shredded
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 2 tablespoons chopped cilantro
  • For Bang Bang Sauce:
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and minced garlic to the skillet. Cook until softened, about 3 minutes.
  3. Add ground turkey to the skillet and break it apart with a spoon. Sprinkle chili powder, ground cumin, smoked paprika, salt, and black pepper over the turkey. Cook until no longer pink, about 6-8 minutes.
  4. While the turkey cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl to make the Bang Bang sauce.
  5. Divide cooked rice among bowls. Top rice with seasoned ground turkey, shredded carrots, shredded purple cabbage, and sliced avocado.
  6. Drizzle each bowl generously with Bang Bang sauce.
  7. Garnish with sliced green onions and chopped cilantro before serving.
