A warm and nostalgic Banana Upside Down Cake with caramelized bananas and a moist cake base.

Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 4 tablespoons unsalted butter
  • 3 ripe bananas
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup softened unsalted butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a medium saucepan, combine granulated sugar and water, stirring until dissolved. Cook until it turns amber.
  3. Remove from heat and whisk in butter until melted, then pour into the prepared cake pan.
  4. Slice bananas and arrange in a single layer over the caramel in the pan.
  5. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  6. Cream together softened butter and sugar until light and fluffy.
  7. Beat in eggs one at a time, followed by vanilla extract.
  8. Gradually add dry ingredients to wet mixture, alternating with buttermilk.
  9. Pour the batter evenly over the bananas in the cake pan.
  10. Bake for 30-35 minutes, checking doneness with a wooden skewer.
  11. Cool in the pan for about 10 minutes before inverting onto a serving plate.
  12. Slice and serve warm.

Notes

Serve with whipped cream or vanilla ice cream. Leftovers can be stored covered at room temperature for up to 2 days.
