Ingredients

Scale
  • 1 1/2 cups crushed vanilla wafers
  • 1/4 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1 cup heavy cream
  • 1/2 cup pudding mix (banana flavored or vanilla)
  • Additional banana slices and vanilla wafers for topping

Instructions

  1. Preheat the oven to 325°F (165°C). In a bowl, mix crushed vanilla wafers and melted butter, then press into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let it cool.
  2. In a mixing bowl, beat together softened cream cheese and powdered sugar until smooth. Add sour cream, vanilla extract, and mashed bananas, continuing to mix until well combined.
  3. In another bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Sprinkle the pudding mix into the mixture and stir until well combined.
  5. Pour the cheesecake batter over the crust in the springform pan and smooth the top.
  6. Chill in the refrigerator for at least 240 minutes or until set.
  7. Before serving, top with banana slices and additional vanilla wafers.

Notes

Use ripe bananas for the best flavor and sweetness. Don’t skip chilling the cheesecake for proper setting.
