  • 23 ripe bananas
  • 1 cup heavy cream
  • 1 cup milk
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • Whipped cream (for topping)

Instructions

  1. Combine the dry ingredients: In a medium saucepan, combine the sugar, cornstarch, and salt. Gradually add milk and whisk until well combined.
  2. Cook the mixture: Cook over medium heat, stirring constantly, until the mixture thickens.
  3. Whisk the egg yolks: In a separate bowl, whisk the egg yolks until smooth.
  4. Temper the egg yolks: Gradually add some of the hot milk mixture to the yolks, whisking continuously to avoid curdling.
  5. Continue cooking: Return the mixture to the saucepan and continue cooking for another 2 minutes, stirring constantly.
  6. Add vanilla and cool: Stir in the vanilla extract and let the mixture cool slightly.
  7. Layer the bananas: Slice the bananas and layer them evenly in the pre-baked pie crust.
  8. Pour custard and chill: Pour the cooled custard over the bananas. Refrigerate until set, about 1-2 hours, then top with whipped cream.
