A delightful dessert featuring smooth custard, ripe bananas, and a light whipped cream topping.

  • 1 pre-made pie crust
  • 3 ripe bananas
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Instructions

  1. Combine dry ingredients: In a saucepan, combine sugar, cornstarch, and salt. Gradually whisk in milk and heavy cream until smooth.
  2. Cook the mixture: Cook over medium heat, stirring constantly until thickened. It should have a pudding-like consistency.
  3. Whisk and temper egg yolks: In a separate bowl, whisk egg yolks and temper them with a bit of the hot mixture, then return this mixture back to the saucepan.
  4. Add flavor: Stir in vanilla extract and remove from heat.
  5. Slice and layer: Slice bananas and layer them in the pie crust.
  6. Pour the custard: Pour the custard over the bananas, making sure they are generously coated.
  7. Chill and serve: Refrigerate until set, then top with whipped cream before serving.

Notes

Use ripe but firm bananas for best flavor. Allow adequate chilling time for the custard to set.
