Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1 cup whipped cream
  • 1/2 teaspoon banana extract
  • 1/4 cup sliced bananas for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs with melted butter until well combined. Press the mixture firmly into the bottom of a greased 9×9 inch baking pan to form the crust.
  3. Bake the crust for 10 minutes, then let it cool.
  4. Beat together cream cheese, sugar, and vanilla in another bowl until smooth.
  5. Add the mashed bananas and banana extract, then fold in the whipped cream until fully combined.
  6. Pour the cheesecake mixture over the cooled crust and spread evenly.
  7. Refrigerate the bars for at least 240 minutes or until set.
  8. Top with sliced bananas before serving. Cut into squares and enjoy!

Notes

Serve chilled, and add extra whipped cream or chocolate sauce for extra sweetness. Keep sliced bananas separate until serving to prevent browning.
