A delightful recipe for moist and flavorful banana bread that’s perfect for using up ripe bananas.

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 4×8 inch loaf pan with butter or cooking spray.
  2. Mash the ripe bananas in a mixing bowl until smooth, leaving some lumps for texture.
  3. Stir the melted butter into the mashed bananas until well combined.
  4. Add the baking soda and a pinch of salt to the mixture, stirring until fully integrated.
  5. Incorporate the sugar, beaten egg, and vanilla extract into the mixture, mixing well.
  6. Fold in the flour gently, being careful not to overmix.
  7. Pour the batter into the greased loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  9. Let the banana bread cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

The riper the bananas, the sweeter the bread. Customize with chocolate chips or nuts for added flavor.
