Soft, tender muffins loaded with chocolate chips that are easy to make and perfect for breakfast or snacks.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Whisk together the all-purpose flour, sugar, baking powder, and salt.
  3. Combine the melted butter, egg, vanilla extract, and milk in another bowl.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  5. Fold in the chocolate chips until they’re evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

For added richness, consider sprinkling extra chocolate chips on top before baking. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
