A delicious combination of spicy queso and salsa with tender chicken, perfect for gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper to create a spice blend.
  3. Pat the chicken breasts dry and rub the spice blend over both sides.
  4. Heat a tablespoon of olive oil in an oven-safe skillet over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
  5. Pour the salsa over the chicken breasts, coating them generously.
  6. Spoon the queso dip over the salsa-covered chicken.
  7. Sprinkle the shredded cheddar cheese on top of the queso dip.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
  9. Remove from the oven and let it rest for about 5 minutes.
  10. Garnish with chopped fresh cilantro and optional sliced jalapeños before serving.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven covered with foil.
