  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 8 oz cream cheese (softened)
  • 1 tbsp fresh chives (chopped)
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 1/2 cup shredded sharp cheddar cheese (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Season the chicken breasts with salt, pepper, and paprika on both sides.
  3. Sear the chicken breasts for 2-3 minutes on each side until golden brown, then remove from skillet.
  4. Sauté minced garlic for 30 seconds until fragrant.
  5. Deglaze the pan with chicken broth and cook for 1-2 minutes, scraping brown bits off the bottom.
  6. Combine softened cream cheese and chives into the skillet, stirring until smooth and seasoning to taste.
  7. Assemble the seared chicken in the baking dish, pouring the creamy mixture over to coat.
  8. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Broil cheese for 2-3 minutes for a golden crust.
  9. Rest for 5 minutes, garnish with fresh parsley, and serve warm.

Notes

For added flavor, vegetables like spinach or sun-dried tomatoes can be mixed into the cream cheese. For a lighter option, use Greek yogurt instead of cream cheese.
