  • 2 lbs chicken, cut into pieces
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 12 Scotch bonnet peppers, chopped
  • 1 bell pepper, chopped
  • 2 carrots, sliced
  • 2 cups coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh thyme (optional)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion, garlic, and grated ginger, and sauté until softened and fragrant, about 5 minutes.
  3. Stir in the curry powder and chopped Scotch bonnet peppers, cooking for about 2 minutes so the spices release their full flavor.
  4. Add the chicken pieces to the pot and brown them evenly on all sides, ensuring they soak up the aromatic goodness.
  5. Toss in the bell pepper and sliced carrots, then pour in the coconut milk and chicken broth. Stir everything together until well mixed.
  6. Bring the mixture to a gentle simmer. Cover the pot and let it cook for about 30-40 minutes until the chicken is cooked through and tender.
  7. Once the chicken is tender, season with salt and pepper to your liking. Add fresh thyme if desired for an extra burst of flavor.

Notes

For a milder curry, use less Scotch bonnet pepper or remove the seeds. You can also substitute the chicken for tofu for a vegetarian version.
