A refreshing and quick Asian Cucumber Salad that adds a burst of flavor to any meal. Perfect for hot days or as a side for rich main courses.

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 2 teaspoons chili paste (optional)
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds
  • Salt to taste

Instructions

  1. Slice the cucumbers thinly and place them in a large bowl.
  2. In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, chili paste, and salt.
  3. Pour the dressing over the cucumbers and toss to combine.
  4. Let the salad sit for 10-15 minutes to allow the flavors to meld.
  5. Before serving, sprinkle with sliced green onions and sesame seeds.

Notes

Best served chilled or at room temperature. Store in an airtight container in the fridge for up to 2 days.
