A comforting apple pie with a flaky crust and warm, spiced apple filling, perfect for autumn gatherings.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter (cold, cubed)
  • 6 to 8 tablespoons ice water
  • 6 to 8 apples (peeled, cored, and sliced)
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • 1 tablespoon butter (to dot)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Mix together the flour, salt, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gradually add ice water until a dough forms.
  5. Chill the dough for at least 4 hours or overnight.
  6. Roll out one disk of dough and place it in the pie plate.
  7. Combine the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
  8. Pour the apple mixture into the crust.
  9. Roll out the second disk of dough and place it over the filling.
  10. Cut slits in the top crust for steam to escape.
  11. Bake for 15 minutes at 425°F, then lower to 350°F (175°C) for 35-45 minutes.
  12. Let the pie cool before serving.

Notes

For a twist, try adding a hint of caramel or mixing in nuts.
