Deliciously fluffy and slightly tart Apple Cinnamon Muffins, perfect for breakfast or a cozy snack.

  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup diced apples
  • Optional: additional cinnamon for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, cinnamon, and salt until well combined.
  3. Mix the granulated sugar, brown sugar, melted butter, eggs, vanilla extract, and milk until smooth.
  4. Combine the wet ingredients with the dry, stirring gently until just mixed.
  5. Fold in the diced apples evenly throughout the batter.
  6. Divide the batter among the muffin cups, filling them about two-thirds full.
  7. Add a dash of extra cinnamon on top of each muffin, if desired.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Cool in the tin for a few minutes before transferring to a wire rack.
