A light, fluffy dessert that feels like eating a cloud, perfect for celebrations or a light treat.

Ingredients

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon salt
  • 12 large egg whites
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the cake flour, 3/4 cup of sugar, and salt. Sift the mixture together.
  3. In a separate bowl, beat the egg whites with cream of tartar until soft peaks form. Gradually add the remaining sugar and continue to beat until stiff peaks form.
  4. Gently fold in the flour mixture and the extracts, being careful not to deflate the egg whites.
  5. Pour the batter into an ungreased tube pan, smoothing the top.
  6. Bake for 35-40 minutes, or until the cake is golden and springs back when touched.
  7. Invert the pan to cool completely before removing the cake.

Notes

Make sure mixing bowls and beaters are clean and free of grease, and use room temperature egg whites.
