These Air Fryer Twice Baked Potatoes are fluffy on the inside, crispy on the outside, and packed with flavor, offering a healthier twist on a classic favorite.

Ingredients

  • 3 medium russet potatoes
  • 12 tablespoons olive oil
  • Kosher salt (to taste)
  • 2 tablespoons butter (softened)
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup sour cream
  • 2 slices cooked bacon (crumbled)

Instructions

  1. Wash and prepare the potatoes by brushing with olive oil and sprinkling with salt.
  2. Poke holes in each potato with a fork to allow steam to escape.
  3. Preheat your air fryer to 400°F (204°C) for about 3 minutes.
  4. Cook the potatoes in the air fryer for 30 minutes, flipping halfway through.
  5. Let them cool for about 10 minutes.
  6. Cut the potatoes in half lengthwise and scoop out the flesh.
  7. Mash the scooped potato flesh with butter, pepper, garlic, onion powder, 1½ cups cheddar cheese, and sour cream.
  8. Fill each potato skin with the creamy mixture.
  9. Top each filled potato with the remaining cheese and bacon bits.
  10. Air fry again for 5-7 minutes until heated through and cheese is melty.
